INGREDIENTS. Serves 4

1 tbs light olive oil
2 large leeks, finely chopped
2 sticks celery, finely sliced
250g risoni pasta
2 x 500g Mures Smoky Fish Chowder
400g Mures Smoked Silver Warehou, skun, boned and diced
50g cheese, grated
50g breadcrumbs
Mures Smoked Salmon, optional garnish
chives, optional garnish

COOKING.

Lightly fry the leeks and celery in oil until translucent, add the risoni and stir until the grains are coated in oil. Pour the Mures Smoky Chowder and simmer for fifteen minutes, stirring occasionally. Stir in the smoked fish pieces and pile into a casserole dish. Mix the cheese and breadcrumbs together and then sprinkle over the top. Bake in a hot oven for fifteen minutes or until the cheese topping is golden brown.

GARNISH.
Top with light sprinkling of finely chopped chives and shredded smoked salmon.
